Roasted coffee will taste best when they’ve had a moment to breathe through a process called degassing. We degas coffee for many reasons such as improved flavor, consistency for extraction, and preservation of freshness.
For light roast beans, expect to find peak flavor 14-21 days from roasting. Best flavor development for a medium roast will be found in the 10-21 day window. Darker roasts will reach peak flavor 5-14 days from roasting.
To preserve the best freshness, it's best to store coffee in an airtight container and consuming them 30 days after roast date. However, if stored properly, quality results and flavors will remain for up to 60 days.
